Chimay Grande Réserve Brew Log – Update 3

I had another sample this past weekend and it seems that I didn’t let it ferment log enough because it too sweet. What I’m going to do next time is warm it up and let the yeast do it work instead of just racking it out at the end of fermentation.

I still have the sour going and it has about 3 more months left till I try that.  Below is a photo I took, not the best quality, but you can see its definitely a sour.
